Hakuna matata

Hoy realicé la comida con los ingredientes que tenía en la cocina y me salió un plato distinto muy rico, tan distinto que para poder repetirlo lo anoté y le puse un nombre. Se llama Hakuna matata, que según dice Wikipedia “es una expresión del idioma suajili que se traduce como "no te angusties" (su traducción literal correspondería a "no hay problema"). Suele ser comparada con la frase carpe diem y se la considera la versión africana de la misma.” Y se llama así porque nació con los elementos que había, sin pensar en otros, y con fe en el resultado.


Hakuna matata 




Ingredientes (para 6 porciones):
3 berenjenas
1 zanahoria
1 pimiento rojo
1 cebolla
1 diente de ajo
8 cucharadas de aceite de oliva
Azúcar, pimienta y sal
300 gramos de arroz
1 estrella de anís estrellado
3 semillas de cardamomo

Preparación:
Cortar las verduras en cuadraditos iguales. Calentar el aceite de oliva y agregar primero la zanahoria, después las berenjenas, luego el pimiento, y por último la cebolla y el ajo. Condimentar con azúcar, pimienta y sal. Cocinar hasta que todas las verduras estén tiernas.
Aparte, cocinar el arroz en agua con azúcar, pimienta, sal, anís estrellado y cardamomo. Retirar el anís estrellado y el cardamomo, colar y servir junto a las verduras.
